It was light and delightful. I put some sea salt in it for some extra love. If you want sweeter muffins add more sugar.

I used a smaller muffin tin and they were done after 25 min. I made a half batch and used half brown and half white suger. They turned out great, sweet but not too sweet.

Really good, basic muffin. Will make regularly. I did lower the sugar to 3/4c with no adversity. Great addition of flax meal on top! I'm sure adding walnuts, date pieces or raisins, even chocolate (or white) chips will be excellent.

I had to half the ingredients because I needed a serving for 12.

Agreeably moist and smooth! I added shredded beets and carrots (2cups total) for a little more veggie. Next time I think I will decrease sugar to 2/3 cup vs 1 cup, a little sweeter than I was hoping. Still delicious!

I can’t stop eating these. I used whole wheat flour and some banana. I’m not a big sweet tooth and next time I’ll use less sugar, but these are fabulous

These are so moist and have great texture. I would add more cinnamon and maybe use brown sugar instead of white sugar the next time I make them. I added nutmeg this time and would definitely do that again. I cut the sweet potatoes in half and put them in the fridge to cool them down quicker.
