- 1/2 onion (medium)
- 4 oz. cremini mushrooms
- 1 clove garlic
- 3 lb. boneless pork loin roast
- 1 Tbsp. salt
- 1/2 tsp. black pepper
- 2 Tbsp. extra-virgin olive oil (plus more as needed, for stuffing)
- 1/2 lb. Italian sausage (removed from casings)
- 1/2 tsp. dried thyme
- 1/2 cup panko
- 1/3 cup grated Parmesan cheese
- 1 Tbsp. extra-virgin olive oil (more or less as needed, for meat)

Directions
- Preheat the oven to 350°F.
- Cover a roasting rack with a sheet of aluminum foil, and poke small holes all over with the tip of a sharp knife. Line a roasting pan with heavy-duty aluminum foil and position the roasting rack inside of it.
- Finely chop the onions and mushrooms. Mince the garlic.

We loved it! Used chorizo instead of Italian sausage. Also marinated the pork in garlic, vinegar, oregano, and salt for two hours before cooking. It was juicy and flavorful.
