Description
Scampi is traditionally made with shrimp and a simple sauce of butter, olive oil, garlic, lemon, and red pepper flakes. For a tasty, healthy twist, we used sweet, succulent scallops instead of shrimp, omitted the butter, and added spinach. You could opt for zucchini noodles (zoodles) instead of linguine for an even lighter dish. The recipe is a Yummly original created by Rima Kleiner, MS, RDN.

- 1/4 tsp. salt (plus more for pasta water, and more to taste)
- 1 lb. sea scallops (medium to large, about 20 per lb.; or up to 1 1/2 lb.)
- 2 lemons
- 5 cloves garlic
- 12 oz. linguini
- 4 Tbsp. extra-virgin olive oil (divided)
- 1/4 tsp. black pepper (plus more to taste)
- 1/4 tsp. crushed red pepper flakes
- 4 cups baby spinach (packed)
- 1/4 cup Parmesan cheese (freshly shredded, plus more for serving)
- 1 Tbsp. finely chopped fresh parsley (optional)

Directions
- Bring a large pot of salted water to a boil. Meanwhile, set scallops on a work surface and gently pull off and discard any tough, crescent-shaped muscles on the sides. Pat scallops dry (this helps them brown more easily) and set aside.
- Zest 1 lemon, ream juice from both lemons, and set zest and juice aside. Mince garlic and set aside.
- Add linguini to boiling water and cook according to package directions until barely tender to bite (al dente), 8-10 minutes. Scoop out and reserve 1 1/2 cups of the pasta water, then drain pasta. While pasta cooks, continue with recipe.
