- 2 lb. carrots (peeled, cut into 1 inch pieces)
- 1 large onion (thinly sliced)
- 2 Tbsp. minced garlic
- 1 sprig fresh thyme
- 1 sprig of fresh rosemary
- 32 oz. chicken broth
- 2 strips bacon (precooked)
- 1 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 1/2 tsp. hot sauce

Followed the directions exactly and it came out with a weird texture and bland. I guess I should have read the reviews, because it looks like most people made major changes to make it better. I ended up straining it and adding basil, parsley, oregano, and extra pepper/salt. That definitely made it more palatable, but again, major changes to make it better. :(

Absolutely delicious. I used my garden carrots( easiest thing to grow) . Boiled the carrots in water and added 2.5 cups of carrot water as broth with 1.5 cups chicken broth. Purée added Curry and a pinch of red pepper. Simmer & let sit to enrich the flavors. I used the rest of the recipe as written.

Great! A few changes, though.
Used all spices listed
Sautéed the onions in butter for 5 mins
Not sliced thin. Too much work for purée.
Added garlic, salt & pepper
Sautéed another minute
Added chicken broth, carrots & 2 apples (peeled, cored & cut in chunks)
Cooked until veggies were soft
Removed sprigs
Used immersion blender
Added an 1/8 cup sugar & 1/2 cup heavy cream & a bit more salt.
Done. No blender to be cleaned. 😉

roasted the carrots, onion and spices, added 2 tsp curry also, was very good!

Maybe it was my blender or maybe I just added too much garlic and onions, but the soup was so thick and creamy that I was basically chewing it. It also didn’t have a whole bunch of flavor, and I followed the directions to the T. Gross

I didn't measure anything but used beef broth instead of chicken, butter instead of oil, and added one potato. I also only had dried seasonings including garlic and onion but needed to use some carrots so b
oiled all ingredients together then added a splash of milk and blended it all. Then added a handful of real bacon pieces and one piece of swiss cheese. Amazing!

I loved it, my son added cinnamon to his and thought that made it tastier. I also added fresh ginger. Will definitely make again.

Yummy! I had dried rosemary but no thyme. I put in some dried Italian seasoning instead (mixed herbs). Instead of hot sauce I used chilli flakes. Delicious combination of sweet and peppery! And I added one small glass of water mixed with a tablespoon of plain flour at the end to thicken it a little. Perfect consistency. Will make again.

I have made this soup time after time and it is always my go to soup, as the ingredients are always in my refrigerator. The taste is excellent and no added dairy or additives. All from scratch is the best with homemade chicken stock. Thanks Yummly.!

I puree the bacon with the vegetables in the vitamix. Very tasty, will make again.

Halved the recipe and used garlic powder and dried rosemary, thyme, and basil while cooking the carrots and onion. Very yummy!

Easy to prepare. Frying the carrots and onions definitely adds a lot to the flavor. Only had a bit of rosemary, but it does the trick :) Will make again with thyme as well.

This was delicious - one of the best soups I’ve had! Made some small adjustments. Added an extra cup of broth because it was a little too thick (and I like thick soups). Used 2 tbsp bacon fat + 1 tbsp butter + 1.5 tsp olive oil in place of the 3 tbsp oil. Added some garlic powder and used 1 tsp each dried rosemary and thyme. I cooked the veggies for about 30 minutes and they had nice color but the carrots weren’t quite tender so I added the broth and simmered until the carrots were softened then blended everything together. I will be making this again!

Healthy and easy to make.. I added a small potato and it was delish. The bacon strips took this soup to a divine level. Definitively will make it again.
