Description
The gentle, moist heat of the slow cooker is just what brisket, a tougher cut, needs to transform into mouthwatering and oh-so tender. This recipe features plenty of sliced onions that cook up plump and juicy along with the meat, so the flavor is unbeatable. Just before serving, reduce the cooking liquid and serve the au jus with the brisket for a delicious sauce. Pro tip: The flavor of fresh herbs fades during the long cooking times that are typically used for slow cooking. If you’d like to use fresh thyme, omit the dried thyme and add 2 Tbsp. minced fresh thyme during the last 30 minutes of cooking. Ingredients
- nonstick cooking spray (or a little vegetable oil)
- 1 large yellow onion
- 2 1/2 lb. beef brisket (up to 3 lb.)
- 1 Tbsp. granulated garlic
- 2 tsp. dried thyme leaves
- 1 tsp. salt
- 1/2 tsp. coarsely ground black pepper
- 3/4 cup reduced-sodium beef broth
- 2 Tbsp. tomato paste
- 2 Tbsp. Worcestershire sauce
- chopped fresh parsley (or parsley sprigs)
Directions
- Spray a 6-qt. slow cooker with cooking spray. Slice onion in rings about 1/4 inch thick, then place in the slow cooker.
- Trim brisket of all but a thin layer of fat. Pat brisket dry with a paper towel and place, fat side up, in the slow cooker over the onions. Sprinkle garlic, thyme, salt, and pepper evenly over meat.
- Stir together broth, tomato paste, and Worcestershire sauce in a small bowl. Pour broth mixture around the meat.
