Description
This hearty, richly flavorful soup comes together in minutes and cooks while you're away having fun. Look for the meatiest ham hock you can find. Any small white bean, such as baby limas or cannellini, can stand in for the Great Northern or navy beans here. The recipe is a Yummly original created by Tina Ujlaki.

Directions
- Trim the roots and dark green ends from the leeks. Split leeks lengthwise, then rinse in a bowl of water (or under the faucet) to release any dirt. Cut the leeks, carrots, and celery into 1/2-inch dice. Mince the garlic.
- Heat the olive oil in a large frying pan over medium heat. Add the leeks, carrots, and celery and cook, stirring, until softened, about 6 minutes. Add the garlic and cook until fragrant, about 2 minutes.
- Rinse the beans in a fine strainer, and pick through to remove any stones. Add beans to a 6 to 8 qt. slow cooker along with the vegetables, bay leaf, salt, pepper, thyme, chicken broth, water, and ham hock. Stir to combine.

It was delicious and enough for two meals; eat it, freeze it or share with a neighbor, for three people. I just wish I knew how to make it a little thicker soup, less water? flour? barley?

Very lovely recipe to use left over ham

It’s a very simple but flavorful and satisfying meal. I didn’t have low sodium chicken broth and because ham hocks are pretty salty, I used less salt but it was still a little too salty for my taste. I think next time I would skip the salt at the beginning and just adjust at the end.

The recipe was great, but my ability to choose a good ham hock needs work. Great taste and texture. I will definitely be using this one again.

They didnt have ham hocks when I went shopping, so I substituted it for a pork jowl. The flavor was really tasty, but it needed more salt. took me 45 mins or so of prep work before I got it to the slow cooker. I think my slow cooker cooks way faster than the one for this recipe, as mine was super tender in 6 hours.

I had dry canellini beans which I soaked overnight. Delicious! I also used dried oregano instead of the fresh thyme. After sautéing the vegetables I deglazed pan with white wine. I will make these beans over and over!

Very good! I modified/improvised a bit and used canned white beans, left over honey baked ham, yellow squash and onion since my local grocery didn't have leek. Used all the same spices though. I will definitely make it again. I also used less water & broth since i didn't cook dry beans.
