yummy! I made a 2nd time with s pommery mustard sauce and thst went well too! Mayo, whole grain mustard, horseradish, dash of tobssco, parsley.
Time saving trick- make the spaghetti squash the day before. wrap in cheese cloth to wring, wrap in fresh and leave it in fridge over night.

It was delicious! We are picky eaters in my family so I’m always happy to find a recipe that at least 2 of the 4 of us will eat! (Mealtime is just painful.) I doubled the scallions and added them in the fritter mix. The only downside is how long it takes to make this meal. With a baby crying at my feet wanting to be held all the time, I’m not a fan of anything that takes me too long. I will probably make the quinoa and spaghetti squash (and squeeze the water out) in advance so that it’s not as much at once.

Really delicious. The hint for a very hot griddle was very good and played a big part in the success

They turned out ok, I used brown rice flour and egg whites. Mine turned out a bit heavy but they made a healthy snack as well as a healthy complex carb alternative.

Came out great! I mixed brown rice flour, flaxseed meal and coconut flour instead of flour used Italian kale instead of spinach topped with cream cheese, and liquid aminos. Added some Bragg’s seasoning for more flavor. Yum!

Prepared as directed. Savory and pretty good. Just a little bland for my taste. Needs some additional seasoning.

Delicious and quite tasty! Alternative to potato latkes. I substituted parsley for spinach which added a bit more flavor along with color. I would make them again, although would like to explore baking as an alternative to frying.

This was delicious and very easy to make, especially if you prepare the quinoa and spaghetti squash a day ahead of time. A big hit!
