Description
There's a reason spinach and artichoke dip is a party staple — not only is it irresistibly delicious but it's also incredibly easy to make. With just five ingredients, your friends, family, and guest can start dipping away in just 30 minutes. Serve it with your favorite crackers, bread, or raw veggies.

- 14 oz. artichoke hearts (drained and chopped)
- 10 oz. frozen spinach (chopped, thawed and drained)
- 1 cup mayonnaise
- 1 cup grated Parmesan cheese
- 2 1/2 cups shredded Monterey Jack cheese

Directions
- Preheat oven to 350 degrees Fahrenheit. Lightly grease a 1-quart baking dish.
- In a medium bowl, mix together artichoke hearts, spinach, mayonnaise, Parmesan and 2 cups of jack cheese. Transfer mixture to the prepared baking dish, and sprinkle with remaining 1/2 cup of jack cheese.
- Bake in the center of the preheated oven until the cheese is melted, about 15 minutes.

So good, I did add some garlic and a finely chopped serrano pepper. I also didn't have enough parmesan so I added a bit of cream cheese.

For the most part it was pretty good. It was a little dry. I needed more artichoke. That was my fault.

I've made a recipe similar to this however it had a teaspoon of chopped garlic and no Monterey Jack cheese. It was amazing and just enough spice.

I did 1/2 cup mayo and 1/2 cup cream cheese instead of all mayo. I also added salt, pepper, all purpose seasoning, onion, and garlic powder.
Sprinkling a bit of mozzarella on the top and broiling for an extra 3 minutes added the perfect amount of extra flavor!

I would use cream cheese or something thicker than the mayo - it’s delicious but a little thin and greasy

I have made this several times because the men I live with eat it up before dinner is done. I time it just right so they can eat the dip until dinner is done. They've even asked me to make it at their family get togethers even though someone else cooks. It has just enough artichokes and there can be more spinach so I add a few more ounces.

Thought it would have more flavor. Salt and pepper? Otherwise easy to make and looked good. Perhaps I needed a different bread or cracker.
