- 1/4 cup virgin olive oil (extra-)
- 1 onion (large, cut into ¼ inch dice)
- 4 cloves garlic (thinly sliced)
- 1/2 medium carrot (finely shredded)
- 3 Tbsp. fresh thyme leaves (chopped, or 1 tablespoon dried)
- 56 oz. tomatoes (peeled whole, crushed by hand, juices reserved)

Definitely check the directions page for the ingredient list!! On the Yummly app, it calls for “tomato sauce”, so in addition to the canned tomatoes, I bought a few cans of simple tomato sauce. The “tomato sauce” is actually prepared using the canned tomatoes, so I have to find a use for the plain tomato sauce I bought.
Great dinner, we had it with a side of rice and fresh veggies.
