Description
Rice and beef stuffed bell peppers from my grandmother's recipe.
Ingredients

- 6 green peppers (large)
- 5 cups water (boiling salted)
- 1 lb. ground beef
- 2 Tbsp. chopped onion
- 1 tsp. salt
- 1/8 tsp. garlic salt
- 1 cup cooked rice
- 15 oz. tomato sauce
- 1/2 cup mozzarella cheese (grated)

Directions
- Heat oven to 350 degrees.
- Cut thin slice from stem end of each pepper. Remove all seeds and membranes. Wash inside and outside. Cook peppers in the boiling salted water, 5 minutes; drain.
- Cook and stir ground beef and onion in medium skillet until onion is tender. Drain off fat. Stir in salt, garlic salt, rice and 1 cup of the tomato sauce; heat through.
- Lightly stuff each pepper with 1/2 cup meat mixture. Stand peppers upright in ungreased baking dish, 8x8x2 inches. Pour remaining tomato sauce over peppers. Cover; bake 45 minutes. Uncover; bake 15 minutes longer.
- Top with grated mozzarella cheese and serve.

I was a little unsure but it turned out as good as I hoped it would. I had a half a jar of spaghetti sauce so used that and minute rice. Next day I used the leftover stuffing mix in soft tacos with tomatoes, lettuce, salsa and spicy aioli...also delicious!
