Don’t have roasting pan so used a baking dish, also used precut chicken quarters I was able to grab from the store. Otherwise I followed the ingredients and steps. Was really good, nothing to rave about but a delicious meal.
I added a little cornstarch to the sauce to thicken it up a bit.

Delicious. I made it with boneless breasts and cut up potatoes as well. Everyone loved it. Made onion soup as an appetizer. Wow! That was a hit.

I am eating this chicken as I write this, and I have to say, it is probably the best roast chicken I have ever made! I substituted the butter with olive oil for the herb-butter and it works (i think) just as well! The sauce definitely makes a difference and the idea of putting mustard into your stock is genius!
