The very best sweet potato casserole with a crunchy pecan streusel topping, made to impress a crowd.

- 4 lb. sweet potatoes (4 lb. is about 6 large)
- nonstick cooking spray
- 6 Tbsp. light brown sugar (packed, for potatoes)
- 1/4 cup butter (melted, for potatoes)
- 6 Tbsp. heavy cream (or half-and-half)
- 1/2 tsp. ground cinnamon (scant, for potatoes)
- 1/2 tsp. ground nutmeg (scant)
- 1/2 tsp. salt (for potatoes)
- 1 pinch black pepper
- 3 large eggs (beaten)
- 2 cups pecans (roughly chopped, 2 cups is about 8 oz.)
- 1 1/2 cups all-purpose flour
- 2/3 cup light brown sugar (packed, for topping)
- 2 tsp. ground cinnamon (for topping)
- 1/8 tsp. salt (for topping)
- 1/2 cup butter (melted, for topping)

Directions
- Poke holes all over the sweet potatoes with a fork and place them on a large microwave-safe plate. Microwave on high until the potatoes are very fork-tender, 15-20 minutes. Carefully remove the plate from the microwave and allow the sweet potatoes to cool until cool enough to handle, about 15 minutes. Microwave in batches if necessary.
- Preheat the oven to 375°F.
- Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
