Description
A simple chipotle chili rub adds a nice layer of flavor to this juicy, beautifully browned pork tenderloin, but the smoky bacon wrapper and sweet maple syrup glaze take it over the top. - Preheat oven to 425°F. Coat a sheet pan with cooking spray.
- Combine smoked paprika, garlic powder, chili powder, chipotle chili, and salt in a small bowl. Using a sharp knife, trim off any silverskin from pork. Rub chili mixture over pork to coat.
- Following the Yummly Thermometer app, choose your doneness (145°F for rosy, or as you prefer), then insert the thermometer horizontally into the thickest part of the side of the meat until the metal is completely covered.

This has a really good flavor. Be sure not to get too big of a pork loin or the bacon will char before the loin is done completely. but overall this is going to be a regular.
