Create Thai-style chicken satay right in your own kitchen! This incredibly juicy chicken features boneless, skinless chicken thighs marinated briefly in spiced coconut milk to tenderize the meat and infuse it with flavor. What truly elevates the dish, though, is the irresistible spicy, sweet, and creamy dipping sauce made with Thai red curry paste, peanut butter, and more coconut milk. Ingredients
- 1 lime (or 2 limes, for serving)
- 2 Tbsp. roasted salted peanuts (for serving)
- 1 lb. boneless skinless chicken thighs
- 1 1/4 cups full-fat coconut milk (10 oz., divided)
- 2 Tbsp. soy sauce
- 2 Tbsp. coconut aminos (or use more soy sauce)
- 1 tsp. kosher salt
- 2 tsp. ground cumin
- 1 tsp. ground coriander
- 1 tsp. ground turmeric
- 3 Tbsp. red Thai curry paste (2 Tbsp. for milder flavor)
- 1/4 cup creamy peanut butter
- 1 1/2 Tbsp. packed light brown sugar
Directions
- You’ll need 10 metal or bamboo skewers, 10-inch size. If you’re using bamboo skewers, soak them in water for at least 30 minutes.
- Cut lime into wedges. Finely chop peanuts. Set aside.
- Open up chicken thighs and cut them into long 1/2-inch-thick strips.
