- 2 sweet potatoes
- cooking spray
- 2 tsp. canola oil
- 1 red pepper (1 cup)
- 1 green pepper (1 cup)
- 1 boneless skinless chicken breasts (1 cup)
- 1/4 cup creamy peanut butter
- 2/3 cup unsweetened coconut milk
- 2 Tbsp. Thai red curry paste
- 2 tsp. fish sauce
- 2 tsp. brown sugar
- 1/8 tsp. cayenne (optional)
- cilantro
- 2 Tbsp. chopped peanuts

Directions
- Preheat the oven to 400℉ (200℃).
- Line a sheet pan with aluminum foil, and spray with cooking spray.
- Cut the sweet potatoes in half lengthwise, and lay the halves flat on the sheet pan.

These turned out pretty great. I read through a lot of the reviews and compiled a lot of tips, so I ended up salting the sweet potatoes after baking them, not scooping out the potatoes at all but instead spooning the sauce mixture right on top, topping with honey roasted peanuts, as well as adding a little extra heat to the sauce. I also served it with a side salad to round out the meal.

Amazing my mom loved it so much. I got honey roasted peanuts instead of regular peanuts and it added good flavor.

Tasted so good! I added so,e extra veggies like eggplant and courgette and instead of fish sauce I added oister sauce as it was what I had at home. Great recipe ❤️

I sliced the sweet potato instead of scooping it and put a ladle of chicken and veg on top. So good and pretty easy to make.

This was delicious! Next time I want to add more veggies. It has endless potential. It would also be good on rice or pasta if you didn’t have sweet potatoes

These were easy and very good. A different take on Thai food as well as stuffed baked potatoes. A great way to use up a partial can of coconut milk that ends up sitting in the fridge!

I'm sure the recipe is great, but it was chosen for "contains finger limes" and there are no finger limes or lime in any form.

Delicious! So fresh and satisfying. I added some onion and garlic to the chicken/sauce mixture and it really brought out all the other flavors. Would highly recommend this recipe!
