  • 1 tsp. fish sauce
  • 1 clove garlic (grated)
  • 1 pinch white pepper
  • 2 Tbsp. oyster sauce
  • 1 Tbsp. fish sauce
  • 1 Tbsp. soy sauce
  • 1 tsp. dark soy sauce
  • 2 Tbsp. palm sugar (or honey)
  • 1 pinch white pepper
  • 2 Tbsp. cooking oil
  • 8 cloves garlic (crushed then chopped)
  • 5 Thai chili (crushed then chopped)
  • 1 shallot (large, sliced)
  • 6 oz. Chinese broccoli (or broccolini, cut into bite size)
  • 1 lb. noodle (fresh rice, sheets, cut into large chunks and separated or dried rice noodles soaked in hot water for 15 minutes then drained)
  • 1 red chili (sliced, optional)
  • 1 handful basil leaves (approximately 2 cups)

    I made a few modifications to get my 5 year old to eat it - no Thai chilis (adults just added sriracha on their own for spice), doubled the sauce, and added a little more sugars into the sauce for a touch of sweetness. Authentic? No. Delicious? Yes!!!

    Great recipe. I added ginger to the shallot garlic mix and I think that turned out great. I also add a lot of chilli oil to really bring the heat. To cool it down I add tomato slices a few minutes before serving so they're warm but not cooked.
