- 8 oz. pork (chicken, beef, shrimp, extra firm tofu or mixture of the proteins)
- 1 tsp. fish sauce
- 1 clove garlic (grated)
- 1 pinch white pepper
- 2 Tbsp. oyster sauce
- 1 Tbsp. fish sauce
- 1 Tbsp. soy sauce
- 1 tsp. dark soy sauce
- 2 Tbsp. palm sugar (or honey)
- 1 pinch white pepper
- 2 Tbsp. cooking oil
- 8 cloves garlic (crushed then chopped)
- 5 Thai chili (crushed then chopped)
- 1 shallot (large, sliced)
- 6 oz. Chinese broccoli (or broccolini, cut into bite size)
- 1 lb. noodle (fresh rice, sheets, cut into large chunks and separated or dried rice noodles soaked in hot water for 15 minutes then drained)
- 1 red chili (sliced, optional)
- 1 handful basil leaves (approximately 2 cups)

It tasted very good. I changed it up just a little. I added carrot shreds & ginger diced very tiny. the only issue was I used prepared rice noodles in a pouch, and they broke up in tiny bits. I'm so glad i doubled the sauce too. Absolutely will make this again.

I made a few modifications to get my 5 year old to eat it - no Thai chilis (adults just added sriracha on their own for spice), doubled the sauce, and added a little more sugars into the sauce for a touch of sweetness. Authentic? No. Delicious? Yes!!!

Great recipe. I added ginger to the shallot garlic mix and I think that turned out great. I also add a lot of chilli oil to really bring the heat. To cool it down I add tomato slices a few minutes before serving so they're warm but not cooked.
