We're giving the classic BLT sandwich a glow up with eggplant bacon weaves and grilled asparagus and pistachio pesto!

- 1/2 Tbsp. black pepper (optional)
- 1/2 cup raw pistachios
- 3 cloves garlic
- 1 cup grilled asparagus (chopped)
- 1 cup basil leaves
- 1 lemon (zested and juiced, divided)
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 1/4 cup extra virgin olive oil
- 1/4 tsp. red pepper flakes
- 1/4 cup grated Parmesan cheese
- 8 slices bread (toasted)
- 4 cups arugula (lightly dressed with your favorite salad dressing)
- 1/2 cup sprouts (optional)
- 1 heirloom tomato (very large, sliced into thick slabs)
