This really is the ultimate pork roast recipe! I did marinate it and I recommend doing that overnight. The recipe says to marinate for 30 mins. I did the seasoning mix and the marinade the night before. It cuts down on prep time. It was relatively easy and VERY tasty. I do recommend, though, to give it a little more liquid to sort of braise it. You don't have to cover it entirely with liquid ( I added more beef broth and I used bone broth). I also recommend that you cover it for the second half of the cooking. The extra liquid and covering it makes it so tender. The only knife you need is to slice it to serve. Sorry, I can never do a recipe ver batum. I always have to tweak it.
