- 1 Tbsp. ground ginger
- 1 Tbsp. celery salt
- 3 Tbsp. tomato puree
- 1 cup tofu
- 2 Tbsp. herbs (Mixed)
- 1 Tbsp. black pepper
- 400 grams jackfruit (drained & water squeezed out – using a kitchen towel., see jackfruit tutorial here)

- 1 Tbsp. smoked paprika

- 1/2 cup bbq sauce (Homemade or store-bought)

Was fairly easy to make. Texture and taste of the seitan was good. If I make this again I think I will change the spice rub as I found the celery salt combo very bitter and overpowering the taste of the "brisket". I may try onion powder, garlic powder and paprika next time.
