- 1 pkg. garbanzo beans (usually 1 lb, chickpea beans)
- 1 yellow onion (medium, or about 1 cup chopped)
- 1 medium tomato (diced)
- 1 red bell pepper (sliced)
- 1/2 cup white vinegar
- 2 garlic cloves (minced)
- 2 Tbsp. tomato (powder, you can use tomato paste also)
- 1 tsp. dried oregano
- 1/4 tsp. Himalayan salt (always start with less and add more as needed for flavor)
- 1 dash black pepper
- 1 dash cayenne pepper
- 6 cups water
- 1 cup broth (veggie, to saute vegetables)
- 1/4 cup fresh parsley (adds a nice flavor and also a beautiful green color)
- 1 cup red potatoes (chopped, takes about 2 small potatoes)
- 1 Tbsp. dried basil
- 1 cup carrots (chopped, about 2 to 3 carrots)
