- 2 stalks celery (chopped)
- 1 yellow onion (chopped)
- 4 cloves garlic (minced)
- 1/4 cup all purpose flour
- 4 cups vegetable broth
- 473 mL stout beer (can vegan, I used Sawdust City Brewing Co Skinny Dippin' Stout)
- 3 carrots (peeled and cut into chunks)
- 2 parsnips (peeled and cut into chunks)
- 8 oz. mushrooms (quartered)
- 2 1/2 cups baby potatoes (halved, or about 2 regular potatoes and cut into chunks)
- 1/2 cup tomato paste
- 2 bay leaves
- 1 tsp. dried thyme
- 2 tsp. brown sugar
- 3/4 tsp. salt
- 1/2 tsp. ground pepper

Great, it is a very tasty stew although not a big fan of stews l plan to use this for a potluck when I cook it again

It’s an excellent recipe. I might add some parsley to counteract the bitterness of the stout, but that’s about it.

This is a great recipe! I usually double it then add green beans, a tsp of vegan Worcestershire sauce and a pinch of rosemary.

Very good. Hubby loved it but I found it a little bitter. Next time I will make it with a non stout beer.

Soooo Good! And easy! I slow cooked mine in a crock pot all day and it was perfect when I got home. Great flavors.

It turned out way too sweet, so I’d use less (or no) brown sugar next time. Otherwise a lot of great flavors and will attempt again.

Yum! This was delicious. I replaced parsnips with celery root since they didn’t have it in the grocery store. If I make it again (I have another stew recipe I love) I would add more mushrooms and fresh rosemary. Definitely good.

This was very good. I used Milk Nitro Stout (12 oz. bottle) and it did not taste bitter at all. I served the stew over mashed potatoes (vegan style). I think next time, I will add broccoli and maybe green beans it lacked something green!

Excellent! I added more veggies (potatoes, celery, green beans) and 1/4 cup Worcestershire sauce. Is it wrong that I could eat the whole pot myself? 👍🏻

So much better the second day. Cooked longer than recipe, did for additional 25-30 minutes. Tasty with crusty french bread! Added chopped mini portobello mushrooms & butternut squash. :)

The stew was delish. Served it with Vegan biscuits "immaculate brand". The directions could be simplified for ex. the tomato paste is 6oz. (you don't have to transfer it from can to measuring cup). Also, the prep time seriously is not 10 minutes, who can peel/chop carrots, parsnips, celery, and onions in that amount of time, (multiple people like on the home building shows, who can build a house in an hour...) let alone pulling ingredients from cabinets and putting the rest of the ingredients in the pot. Please be more realistic! I cooked mine in the instaPot on the stew setting and it took 3 times to run at 35 minutes each... so 1 1/2 hours of cooking!!
Thank for you the wonderful recipe. I will remake again soon. I just would like to see times adjusted for prep and cooking.

Really tasty and hearty - I used vegan beef stock instead of veg broth - but cooking time was way longer than described (prob. closer to an hour) and didn't really thicken much. I don't think I used the right potatoes either. Still, would be wonderful in the middle of winter, will definitely make again.

It was excellent. Used red wine instead of beer. Dark beer can turn bitter in my experience. Did it in an instant pot, maybe eeeee a few minutes too long 15.

Lots of chopping. But it cooks really fast. I thought the flavor was too bitter. I couldn’t eat it. Won’t make it again.

Pretty good basis for crockpot stew, though too much for our slow cooker. Improvised quite a bit.

Cut in half for 4 servings. Added more salt and pepper than it called for, and ended up using 2c of broth. Simmered for 20 minutes. Used a stout from Lagunitas. I think I would rather use more carrots than a parsnip though.

I'm speechless with this recipe!! Crazy flavour, my friends didn't believe how tasty it was. I'm definitely doing it again (this time i used regular toasted beer but next time i want to do it better.

I've made it several times adding fresh green beans, peas and red wine in place of the beer. My kids even like it!
