- 1 bell pepper (I like red or green)
- 1 small onion (thinly sliced)
- 1 cup seitan (strips, unseasoned or pre-seasoned/marinated work — adjust spice/flavor/salt as needed)
- 1/4 tsp. smoked paprika
- 2 nutritional yeast (+ Tbsp, nutritional yeast)
- 1/2 cup vegan cheese (shredded, any variety that melts — see my vegan cheese guide here)
- 2 tsp. tamari (liquid to add savoriness to the mixture)
- 1 tsp. extra virgin olive oil (for the pan)
- 1 jalapeño (small, thinly sliced for a spicy kick, optional)
- 3 Tbsp. bbq sauce (vegan, optional)

instead of putting this on a bun, i put it on a flat bread pizza with vegan pepperjack and mozzarella. it wa so good! my family loved it!

Amazing! I left out the shredded seitan and used spinach wraps instead of bread. It will be a staple recipe!

I can't believe how delicious this was!! I made my own vegan cheese to go with it rather than using shop bought cheese. It was seriously one of the most delicious recipes I've made in a while.
