Vegetarian and big on flavor, these Vegetable Fajitas are made with portabella mushrooms, red and green bell peppers, and white onion for a hearty and satisfying meal. - 1/2 red bell pepper
- 1/2 green bell pepper
- 1/2 white onion
- 1 lb. portabella mushrooms (2-3 whole mushrooms)
- 1 Tbsp. fajita seasoning
- 1 Tbsp. smoked paprika
- 2 Tbsp. vegetable oil (divided, plus more if needed)
- 1 Tbsp. minced garlic
- 8 soft flour tortillas (7-8 inches wide)
- pico de gallo (or other favorite salsa)
- sour cream (optional)
- guacamole (optional)
- shredded Mexican-blend cheese (optional)

Directions
- Remove stems and seeds from bell peppers. Peel onion. Slice vegetables lengthwise into 1/2-inch strips.
- Remove stems from mushrooms and save for another use. Scrape out gills with a spoon and discard or save for another use. Slice mushrooms into 1/2-inch strips.
- Working on a sheet pan, season vegetables with fajita seasoning and smoked paprika.
