- 2 1/2 cups sweet potato (diced, about 1 medium)
- 2 1/2 cups eggplant (diced, about 1 small)
- 2 cups zucchini (diced, about 1 medium)
- 2 cups green beans (chopped, 1-inch long)
- 2 cups broccoli florets (chopped)
- 1 Tbsp. coconut oil
- 2 large garlic cloves (minced)
- 29 oz. diced tomatoes (I used fire roasted)
- 27 oz. full fat coconut milk
- 2 Tbsp. soy sauce (or wheat-free tamari)
- 1 Tbsp. ginger (freshly grated)
- 1 tsp. red pepper flakes (optional)
- 1 cup water (optional)
- fresh herbs (For serving:, or grains, optional)

Directions
- Prep all vegetables, cutting into bite-sized pieces. Set aside.
- Turn KitchenAid® Multi-Cooker on to the “Saute” setting. Once preheated, add coconut oil, garlic and sweet potatoes. Cook until sweet potatoes have started to brown, 2-3 minutes.
- Pour in tomatoes and coconut milk and stir to combine.

I really loved it. The flavor is surely somewhat mild but it is still very wholesome. Loved it!

It’s got no flavour and it is VERY vegetably. If you are used to food that has any flavour, I wouldn’t recommend it at all.

This is tasty; however, I could tell that it was not going to be spicy enough for us. I added 0.5 tsp dried chilis. I used 3 Tbspn soy sauce. I used less coconut milk— 0.625 litres. We put it over couscous & that soaked up the juices nicely.
