- 2 garlic cloves (minced)
- 1 ginger (1-inch length, peeled and minced)
- 1 red chili (medium-hot, such as Fresno, chopped)
- 1 chili (hot red or green bird, thinly sliced)
- 12 oz. rice vermicelli noodles
- 1 lb. beef skirt steak (or sirloin, in thin 1/4-inch slices)
- 2 Tbsp. fish sauce (best quality, such as Red Boat)
- 1 Tbsp. light brown sugar (Demerara or granulated)
- 3 garlic cloves (minced)
- 3 Tbsp. lemon grass (finely chopped, tender centers only)
- 1 head lettuce (such as butter lettuce or Little Gems, tender center leaves separated)
- 2 Tbsp. vegetable oil
- 4 scallions (slivered)
- 1 medium carrot (cut in 3-inch lengths, julienned, about 1 cup)
- 1 cucumber (small, 3-inch lengths, julienned, about 1 cup)
- 1 daikon radish (3-inch length, julienned, about 1 cup)
- 3 cups cilantro (Mixture of, springs, mint leaves, basil leaves and small perilla (shiso) leaves)
- 4 Tbsp. roasted peanuts (crushed)
- 4 Tbsp. fried shallots (available in Asian groceries)
- 1 handful bean sprouts (or sunflower sprouts, optional)
