- 1 1/2 Tbsp. lime juice
- 4 Tbsp. extra-virgin olive oil
- 1/2 tsp. honey
- 1/8 tsp. ground cayenne
- 1/8 tsp. sea salt
- 2 bunches watercress (hydroponic, – stems trimmed, rinsed and spun dry, regular watercress or baby arugula are good substitutes)
- 1 radicchio (medium, 8 oz, 225 g – leaves torn in 2″ pieces)
- 2 Fuyu persimmons (large, ripe but still firm, – peeled and cut in 1/2″ cubes)
- 1/4 cup salted cashew (roasted, pieces)
- ground white pepper (freshly, to taste)
