- 1 1/2 lb. boneless skinless chicken breasts (trimmed and cut into 1-inch pieces)
- 1 tsp. kosher salt
- 1 tsp. ground black pepper
- 3 tsp. chopped garlic (divided)
- 1 tsp. ground cayenne pepper (use lesser amount for a bit less heat)
- 2 Tbsp. vegetable oil
- 1 yellow onion (small, finely diced)
- 1 red bell pepper (small, seeded and finely diced)
- 1/2 green bell pepper (seeded and finely diced)
- 1 jalapeño pepper (small, seeds and ribs removed, finely diced)
- 4 cups chicken broth low sodium (store-bought or homemade)
- 1/2 cup smooth peanut butter
- 1 Tbsp. tomato paste
- 1/4 cup tomato (drained canned chopped)
- 1/2 tsp. dried thyme
- 1 tsp. fresh ginger root (peeled, grated)
- 1/2 cup coconut milk
- 1/4 cup chopped cilantro (or parsley, for garnish, optional)

This was so delicious. I didn't want to make it too spicy as my son wouldn't have eaten it so I substituted the cayenne with paprika (sweet hungarian). That is the only change I made to the dish. If you want a stronger peanut flavour I suggest adding more peanut butter but my family had not one complaint.

Bland. Not really sure what flavor it was trying to go for, but it was pulled in so many directions that there was not one flavor that could be really tasted. I liked the idea of adding peanut butter, but just couldn't get the flavors to blend well with this recipe

It was only ok to me. It had a much stronger peanut flavor than what I’ve eaten in the past. I also did not think the flavor was balanced. Very peanut butter and not too savory. Also, it took much longer than what’s listed in Yummly. I would not make again. Would try another recipe before.
Additionally, the recipe directions do not come through while in the Yummly app. I had to pull it up on my computer.

I made it exactly as directed. It was very good but I thought it was a little bland. I like my food with a little more flavor. Maybe extra peanut butter and some chopped peanuts on top would have helped.
